Chinese Chicken Noodle Soup
The next time you have someone sick that you want to make soup for, try this Asian twist on the classic!
Ingredients:
2 c. diced cooked Chicken
2 c. Bok Choy,
sliced
½ c. Green
Onions, thinly sliced with tops
4 oz. Mushrooms,
sliced
½ c. chopped
baby Carrots
1 in. fresh Gingerroot,
grated
2 cloves
Garlic, pressed
3 c. Water
1 can Vegetable
Broth
1 tbsp. Soy Sauce
1 pkg. Oriental
Flavor Ramen Noodles
Directions:
1. Dice chicken and saute using cooking spray until cooked
2. While Chicken is cooking slice all of the vegetables:
-Slice Bok Choy into thin strips
-Cut mushrooms
-Cut carrots
-Peel Ginger root and grate
-Press Garlic
-Chop Green Onions (including tops)
3. set aside Cooked Chicken
4. In a large sauce pan, place mushrooms, carrots, ginger
root, garlic, water, broth, soy sauce, and seasoning packet from ramen noodles.
Bring to a boil over medium heat
5. Add chicken, Bok Choy, onions, and noodles
6. Cover, remove from heat and let stand 3 minutes
