What’s for Dinner? Mama’s Potato Salad, Fried Summer Squash, Boiled Shrimp, and a Fresh Green Salad


   
Mama's Recipe
   My mom is pretty well known for her potato salad. We used to eat it as soon as she had it finished, still pipping hot. I got her to write down the ingredients for me a while back, and it has been sitting in my recipe binder ever since. I wanted to make a potato salad that was true to her recipe, but I am the only one who will eat it at my house so I had to downsize.

Mama’s Potato Salad (My Version)


Ingredients:
 1 lb. Petite Red Potatoes
2 Boiled Eggs
3 tbsp.  sour cream
1 tbsp.  Mayo
1 tsp. Vinegar
1 tbsp.  Sweet relish
1 tbsp.  Chopped Onion

Directions:

  1. Boil potatoes. Boil eggs. Cook bacon.
  2. Meanwhile, mix all other ingredients together in a medium mixing bowl. Set aside. (I prefer to put mine in the fridge for at least 15 minutes while everything else finishes cooking.)
  3. Pat bacon free of any remaining grease. Crumble and add to mixing bowl.
  4. Drain potatoes. Chop into 1/2 inch pieces. Add to mixing bowl.
  5. Drain eggs. Peel. Chop into 1/2 inch pieces. Add to mixing bowl.
  6. Use electric mixer on low speed to blend all ingredients together.
  7. Serve chilled.

Adam’s Favorite Goulash



Adam’s Favorite Goulash

                The last time I cooked this, Adam thanked me for not “messing it up” by adding vegetables after he cleaned his second bowl. Lack of green aside, this is a great 15 minute dinner option.

Ingredients:

1 lb.        Ground Beef
8 oz.       Can tomato sauce
2 tbsp.  ketchup
½ tsp.    salt and pepper
7 oz.       macaroni noodles
¼ c.        shredded cheddar cheese.

Directions:


  1. In skillet, brown beef; pour off fat.
  2. Add tomato sauce, ketchup, salt and pepper. Mix.
  3. Cook noodles according to package directions; drain.
  4. Stir noodles into beef mixture. Heat thoroughly.
  5. Sprinkle on the cheese and eat up!

Chinese Chicken Noodle Soup



Chinese Chicken Noodle Soup


The next time you have someone sick that you want to make soup for, try this Asian twist on the classic!

Ingredients:

2 c.         diced cooked Chicken
2 c.         Bok Choy, sliced
½ c.        Green Onions, thinly sliced with tops
4 oz.       Mushrooms, sliced
½ c.        chopped baby Carrots
1 in.        fresh Gingerroot, grated
2              cloves Garlic, pressed
3 c.         Water
1 can      Vegetable Broth
 1 tbsp. Soy Sauce
1 pkg.    Oriental Flavor Ramen Noodles



Directions:

1. Dice chicken and saute using cooking spray until cooked
2. While Chicken is cooking slice all of the vegetables:
-Slice Bok Choy into thin strips
-Cut mushrooms
-Cut carrots
-Peel Ginger root and grate
-Press Garlic
-Chop Green Onions (including tops)
3. set aside Cooked Chicken
4. In a large sauce pan, place mushrooms, carrots, ginger root, garlic, water, broth, soy sauce, and seasoning packet from ramen noodles. Bring to a boil over medium heat
5. Add chicken, Bok Choy, onions, and noodles
6. Cover, remove from heat and let stand 3 minutes

Margaret Mexico Pie



Margaret Mexico Pie

 This recipe gives you a great mix of Tex-Mex without the need for too many ingredients.

Ingredients:


2 cans    Margaret Holmes Tomatoes, okra, corn, drained well
1 can      red kidney beans, drained well
1 lb.        ground beef, browned and drained
1 tsp      salt
2 tbsp. Texas Pete sauce (Or whatever hot sauce you prefer)
1 pkg. cornbread mix
2              eggs, lightly beaten
1 can      cream corn
1 can      diced minced green chilies
1 cup Four Cheese Mexican Shredded cheese

Directions:



  1. Preheat oven to 450 degrees.
  2. Brown beef until there is no pink, drain. In a medium mixing bowl, combine tomato mixture, kidney beans, cooked ground beef, salt, and hot sauce. Make sure all cans are drained well before mixing.  Spoon mixture into 9 x 13 Pyrex dish.
  3. Mix cornbread mix, eggs, corn, and green chilies.  Pour over the top of bean mixture. Sprinkle cheese on top. Bake for 25 minutes at 450 degrees.

So, I might love my dog too much. That won't stop me from expecting everyone else to as well.

Fabulous Fifty-Cent Find: Progresso Recipe Starters


                It is no secret that I love Dollar Tree. I wouldn’t be surprised if it evens out that I do about 1/3 of my shopping there. The Dollar Tree in Florence just for a refrigerator section, and that made me even happier to shop there. When it comes to snack and items for lunch boxes, grocery stores can add up bad. But the Dollar Tree offers a good variety for a busy and frugal family.
                This past week I was excited for a new find at Dollar Tree, Progresso Recipe Starters. These bad boys were only 50 cents to boot. I got two of each flavor and smiled all the way to the register. I’ve only used one of them so far, but it worked great! I’ll share what I did down below. Oh, and an additional note. The cans have a box top so you can make some money for your children’s school too!

Creamy Roasted Garlic Round Steak with Fire Roasted Vegetables

Ingredients:

2          Quarter Pound Round Steaks
1 can    Progresso Recipe Starters in Creamy Roasted Garlic

Directions:
            Place vegetables in the bottom of an oven safe pan. Cover with steaks. Embed steaks to be even with vegetables. Pour Progresso sauce over steaks and vegetables. Cook on 400 degrees for 30 minutes.


The steak was tender and the vegetables had a great balance of flavor. Most of the recipes on Progresso's site use chicken with this sauce, but I wanted to try something a little different.
