What’s in my Independence Day Basket? Spicy Salmon Wraps and Calypso Ham Sammies

                I love family get-togethers. The best part naturally is the food. I like to use recipes that I can make the day before so I’m not in a rush the morning of… For the 4th this year, I fixed Spicy Salmon Wraps, Calypso Ham Sammies, homemade honey mustard, and some fresh cut onions and peppers.

Spicy Salmon Wraps:

½ c Light Mayo
1 finely chopped jalapeno pepper
2 tsp. Lime Juice
1- 6 oz. can of Salmon
6- 7 in flour tortillas
                Mix the first four ingredients together until blended smoothly. Spread on tortillas and roll.  Cut into inch long sections. Serve.


Calypso Ham Sammies

1 pack of premade hoagie buns
8 slices of pepper jack cheese
16 slices of smoked deli ham
1 can of sliced pineapple
                Cut buns in half horizontally and vertically. Place half a slice of cheese, 1 piece of ham, and a half of a pineapple slice on piece of bun. Cover with another piece of bun. 
Kid tested, Belle approved.
