Wednesday (8/26): Three-Chile-Dusted Shrimp with Quick Corn Relish I did not follow the recipe instructions. I cooked everything but the shrimp and chili powder together first. Coated the shrimp with plain chili powder, salt, and pepper, then added it in just long enough to cook. It was delish! Oh, I also added a chopped zucchini to the corn mixture.
Thursday (8/27): Taco Night. Beef tacos with the usual fixings. Not the healthiest, but it will be quick and easy.
Friday (8/28): Sausage and Pepper Skewers with Couscous. The plan is to make this with smoked sausage instead of chicken sausage. I've tried to cook with chicken sausage before but about the only thing we could stomach it in was red beans and rice. Also, I will use the boxed couscous I get from Aldi and serve it on the side for the dish. It is so good and I've just never had any luck with couscous any other way.
Saturday (8/29): Barbecued Raspberry Hoisin Chicken. I got fresh raspberries at the grocery store yesterday and I just hope they survive in the fridge without getting eaten until Saturday. I used to be really weary of using too much fruit in savory dishes, but I've had a lot of luck with pork/.fruit pairings lately and I'm excited to try it with chicken.
Sunday (8/30): Meatloaf. My world famous meatloaf. My recipe is super secret, but Paula Deen's comes close. I have no idea what I am going to fix on the side yet. Probably sauteed zucchini and fresh mashed potatoes.
Monday (8/31): Pork Loin Chops with Cinnamon Apples and Harvest Salad. Obviously I will have to cook the pork and apples separately if I want any pork. However, I think the family will appreciate some home made cinnamon apples. For the salad, I will leave out the avocado (yuck!) and use olive oil instead of walnut oil. I cut the $11 walnut oil from the grocery list to save on cash.
Tuesday (9/1): Crockpot chicken. Unwrap chicken. Take icky stuff out of the middle. Rub whole chicken with whatever spices you like. Bam! Its done when I get home from work.
