From Yuck to Yummy: Betty Crocker Sour Cream & Chives Potatoes


Okay, so I’m super cheap when it comes to buying groceries. Betty Crocker potatoes go on Publix BOGO like once and month and I usually jump on the offer.
Why?
1.     Mini-him will actually eat mashed potatoes from potato flakes. Pure processed carbs are right up her ally.
2.     They have a box top. Mini-him likes to be the one who brings the most in for school and I like helping the school out since I don’t have wads of cash to give.
3.     They tend to be a Upromise offer. Upromise is the only way I’m ever able to get money into a savings account so I’m a huge fan.
So... Whenever I buy potatoes that aren’t just mashed, they tend to sit in the pantry FOREVER. I decided it was time to try to put it to good use.

My idea: Sour Cream and Chive Cube Steak with Potatoes
I took the box and all of the ingredients it claims in needs (water, milk, butter).
I then took my defrosted cube steak and laid it flat in some Tupperware. I whisked together the milk and seasoning packet from the boxed potatoes. I then poured the milk-seasoning mixture on top of my cube steak and put it in the fridge to chill out.
Then I put the water and butter in a measuring cup, microwaved it for 3 minutes. Meanwhile, I took the dehydrated potatoes and tossed them with some EVOO, garlic powder, and onion powder. After the water was done, I mixed it together and microwaved it for another three minutes.
I put the potato-water mixture in the bottom of a Pyrex. I then put the cube steak on top of the potatoes. Lastly, I poured the rest of the milk mixture on top and baked this according to the directions on the box.
When time was finished, I fried the cube steak in oil for about 30 seconds on each side to get it browned.
I served this with a simply salad (yummy) and zucchini fries (which turned out gross). Oh, and I cooked some killer Reece’s Pieces cookies so I it would be a totally unhealthy meal.


The verdict?
Husband and I both thought it turned out better than if I had just thrown it together via box directions. We both REALLY loved the cube steak. It was flavorful, tender, and cooked perfectly. The potatoes themselves still tasted a bit like cardboard but I never claimed to be a miracle worker.

The best part of this was actually the next day. I decided to make potato pancakes with my leftovers. I took the leftover potatoes (with very little of the gravy that ends up on them) and put them in the food processor with some green bell pepper and onion. I them mixed this with an equal part of leftover mashed potatoes and an egg. I breaded the patties with flour I had seasoned with salt and pepper and fried the babies up to a nice brown.
Oh my god. They were the best seasoned potato cakes I have ever made in my life. The consistency was nicer than usual and they seemed to fry well without taking on too much of the grease. Hello, new idea for boxed potatoes!


So I essentially learned that boxed potatoes are boxed potatoes. However, with love and determination, they can be quite enjoyed. 

Monday Morning Prayer






Honestly, I don’t pray very often. However, this morning I said a very long prayer for the mother who had three sons responsible for the horrific attacks in Paris.

I prayed that if she did not raise her sons to commit such an act, that she is able to find peace in this difficult time. I prayed that she does not feel defeated. I prayed that she does not feel as though it is her body that brought more evil into our world. I prayed that she can stay strong and continue to be a voice for peace. I prayed that she can have an impact on others who may be raising children to spread hatred and fear.

I prayed that if she did raise her sons to commit this act, she is able to learn from her mistakes. I prayed that she is changed by the savagery of her sons.  I prayed that she will take what has happened, and the inevitable loss of her children, as a sign that she should spread a message of love and peace from this point forward. I prayed that she can be a warning to other mothers who do not take the time to teach their children the damage that can be done when we do not show our children the value of human life.

Finally, I prayed that if the mother of these men is dead, that she experienced love in her life. I pray that she was the type of mother that tried to give her children the best chance possible. I pray that she was at peace when left life behind. I pray that her memory is powerful for the good in the hearts of those that love her.

I hear so often that in order for America to be great again, we must have parents who teach children the difference between right and wrong. This is not just for the USA, but for all human beings. We must all hope that we do our best as parents. Sometimes this isn’t enough to avoid hate, but it is a start.


Please join me today in praying for all the parents involved in the Paris attacks. Those who unfairly lost innocent loved ones. Also, those who were unable to instill the importance of human life in their children.

Meal Plan, August, Week 4

Wednesday (8/26): Three-Chile-Dusted Shrimp with Quick Corn Relish I did not follow the recipe instructions. I cooked everything but the shrimp and chili powder together first. Coated the shrimp with plain chili powder, salt, and pepper, then added it in just long enough to cook. It was delish! Oh, I also added a chopped zucchini to the corn mixture.

Thursday (8/27): Taco Night. Beef tacos with the usual fixings. Not the healthiest, but it will be quick and easy.

Friday (8/28): Sausage and Pepper Skewers with Couscous. The plan is to make this with smoked sausage instead of chicken sausage. I've tried to cook with chicken sausage before but about the only thing we could stomach it in was red beans and rice. Also, I will use the boxed couscous I get from Aldi and serve it on the side for the dish. It is so good and I've just never had any luck with couscous any other way.

Saturday (8/29): Barbecued Raspberry Hoisin Chicken. I got fresh raspberries at the grocery store yesterday and I just hope they survive in the fridge without getting eaten until Saturday. I used to be really weary of using too much fruit in savory dishes, but I've had a lot of luck with pork/.fruit pairings lately and I'm excited to try it with chicken.

Sunday (8/30): Meatloaf. My world famous meatloaf. My recipe is super secret, but Paula Deen's comes close. I have no idea what I am going to fix on the side yet. Probably sauteed zucchini and fresh mashed potatoes.

Monday (8/31): Pork Loin Chops with Cinnamon Apples and Harvest Salad. Obviously I will have to cook the pork and apples separately if I want any pork. However, I think the family will appreciate some home made cinnamon apples. For the salad, I will leave out the avocado (yuck!) and use olive oil instead of walnut oil. I cut the $11 walnut oil from the grocery list to save on cash.

Tuesday (9/1): Crockpot chicken. Unwrap chicken. Take icky stuff out of the middle. Rub whole chicken with whatever spices you like. Bam! Its done when I get home from work.
